Kombucha is a drink made from fermented sweetened tea. Kombucha has a sweet and sour taste, it is slightly sparkling and in recent years, the drink has become increasingly popular in the western world. This surge in popularity is in part due to the supposed health benefits.
The exact chemical composition and the effects of the fermentation conditions on the composition are relatively unknown. The goal of this study was to develop and validate a method for determining the fingerprint of apolar compounds in kombucha. The validation was done for menthol, carvone, geraniol and caffeine. These were chosen because they are components of kombucha or representative of components.
